The trick is to use your middle finger to grip the eel at a spot about 1/3 of the way down its body:

It reminds me of the “eel” tale in the memories of a geisha book.
I can honestly say that this would have been a great help a few months ago.
Eels are slimy and unwieldy. Chopping the head off was the easy part.
